Frosting: 2 cups of butter (softened), 4 cups of confectioners’ sugar, 3/4 cup of baking cocoa, and 1/2 cup of milk.
Garnish: 1 pound of fresh strawberries (hulled), 2 ounces of semisweet chocolate (melted), 4 ounces of semisweet chocolate (chopped), and 1/2 cup of heavy whipping cream.
Step 1: Combine all of the “cake” ingredients into a mixing bowl. Then, beat on low speed for about 30 seconds. Take the speed up to medium for about 2 minutes. Afterward, transfer the mixture to two greased and floured 9-inch round baking pans.
Step 2: Bake the cakes at 350 degrees for about 30 minutes (or until an inserted toothpick comes out clean). Allow the cakes to cool for about 10 minutes. Then, remove them from their pans and allow to cool completely.
Step 3: Take a large bowl and cream together the butter, cocoa, and confectioner’s sugar until it is light and fluffy. Then, beat in the milk until it’s smooth. Once this is complete, spread the frosting over the the cakes – between the layers, over the top, and over the sides.
Step 4: After the cakes are iced, create the garnishes. Spoon or pipe the melted chocolate onto waxed paper in beautiful, decorative designs. Then, place this aside and let the designs stand until set.
Step 5: To make the ganache, place the 4 ounces of chopped semisweet chocolate into a small bowl. Then, heat the heavy whipping cream to a boil. Afterward, pour in the chocolate and whisk together until smooth.
Step 6: Drizzle this mixture over the top of the cake; (be sure to allow the ganache to drape down the sides). Afterward, arrange the strawberries on the top of the cake and place the chocolate garnishes on top.
